Food allergies are fun, let me tell you. If you want to meticulously investigate every last ingredient in the foods that pass your lips, food allergies are for you. If you delight in going out with friends to enjoy a nice meal and watching everyone eat while you chomp on ice cubes, food allergies are for you.
This is sarcasm. FYI.
Food allergies and sensitivities are a pain, both literally and figuratively. Take my dear sweet mother for example. She loves eggs. Eggs are digestive death for her sensitive system. And now you are thinking “she must miss eggs so much”, and in a perfect world that would be true. But she eats them, regardless, and suffers.
It’s strikingly similar to my relationship with the occasional spoonful of liquid cheese. It hurts so good.
BUT even though we torture our guts for an occasional special treat, we can be gentle much more frequently. Take my delicious and digestively friendly tofu salad for example. It’s creamy with a hit of depth from the smoked paprika. You can’t leave that out. It’s just not the same.
Trust me.
Smokey Tofu Salad
NOTE: There IS mayonnaise in the recipe for two reasons.
1. Mayonnaise is delicious and makes my mouth happy.
2. My mother and myself don’t seem to be sensitive to mayo. Go figure.
-Accouterments-
1 package Nasoya Extra Firm Cubed Tofu, drained
2 to 3 tbsp Organic Mayonnaise
1/4 tsp Smoked Paprika
1/4 tsp Garlic Powder
1/2 large Pickle, finely chopped
Various dipping vegetables, crackers, bread, etc.
Drain water from tofu packaging, place on a clean dish towel and press out excess water. Add all ingredients into bowl and mix thoroughly until tofu is broken into small pieces. Serve on crackers, with vegetables, or as a sandwich filling.
Could it be more simple?
Maybe…but it probably wouldn’t be so delicious.
SO get over your hang-ups and misconceptions about tofu. This protein packed, versatile fermented soy product can be an amazing substitute for a whole host of ingredients.
And trust me when I say I’ve got a lot of recipes to come.

I don’t know why people freak out about tofu – there’s really nothing to not like about it. It doesn’t have any weird flavor, offensive smell, it’s sort of just smoooottthhhhh. LOL. This recipe sounds really good to me! I love tofu and it really just picks up any flavor or spice you combine it with. So, I hope people do try this!

There really is no rhyme or reason that people dislike tofu. Especially considering how much Americans consume SOY! Anyway, I love the stuff too. It’s a nice way to switch things up and it really is so versatile. Maybe the pretty pictures will entice people to give it a chance? 🙂

It is definitely a good option. The only reason I used full fat is being a vegetarian and gluten free, I miss out on some fats. But I actually can’t tell the difference!
