Snowball Cookies ๐ with Pep!
Who doesn’t love a classic snowball cookie? It’s just a buttery lump of flour and sugar rolled in confectioner’s sugar.
What’s not to love? (#rhetorical)
But since the Classic Snowball Cookie has been keto’d to infinity, I wasn’t about to post the same old snowballs for you. I am all about reinventing the wheel. Making more work for myself. Eating batch after batch after buttery batch.
I might be a cookie masochist.
SO. These cookies. It is possible to make them the traditional way without peppermint, but why? This is candy cane season friends! Let’s liven up the cookie exchange of life! Sneak in a little peppermint sugar and red food coloring creating the buttery festive cookie of your Christmas dreams!
I realize that’s a lot of pressure for a cookie, but I think it can handle it.
๐ Improv Peppermint (Calorie Free) Sugar
Making keto peppermint sprinkling sugar is super easy and incredibly effective. Just add the extract to the sugar substitute and mix well, then strategically drip red food coloring and gently cut it in with a fork. That gives you this red & white mix that is great for adorning your abominable snowballs. Just don’t go overboard or you might get that bitter bite that comes with peppermint extract.

Sugar Tip: Don’t run out of Sugar-Free Powdered Sweetener!
You may notice with your discerning eyes that I did not use confectioner’s
sugar to roll these balls.
I ran out and though it is possible to make powdered sugar (erythritol)
my blender wasn’t up to the challenge.
You are probably now beginning to notice the red pieces
INSIDE the cookie ball.
I cut some of the red sugar into the chilled dough
because it’s even more beautiful and festive!

Peppermint Snowball Cookies {GF & Low Carb}
Put some buttery peppermint dough balls in your mouth because it's Christmas.
Ingredients
For the Cookies
- 6 tbsp Butter
- 1/4 cup Granulated Low Carb Sweetener (Erythritol or fave blend)
- 1 large Egg
- 1/2 tsp Peppermint Extract
- 1 1/4 cup Almond Flour
- 2 tbsp Coconut Flour
- 1/4 tsp Xanthan Gum (because we like our balls soft not crumbly)
- 1/2 tsp Coarse Salt-don't skip this!!!
Sugars To Adorn
- 1/2 cup Powdered Low Carb Sugar, to roll cookies (like swerve)
- 1/3 cup Granulated Low Carb Sugar
- 1/4 tsp Peppermint Extract
- 2-3 drops Red Food Color (optional for red sprinkles)
Instructions
Peppermint Sugar
- Mix granulated sweetener and peppermint extract.
- Add 2-3 drops food coloring and gently cut in, leaving large spots of red. Refrigerate until ready to use.
Cookies!
- Heat oven to 350 and line a baking sheet with parchment.
- Cream together the butter and sweetener.
- Add the extract and egg and mix until smooth.
- In a separate bowl, whisk the flour, xanthan gum, and salt to distribute evenly.
- Slowly add the flour mixture to the butter mixture, mixing until a soft dough forms.
- Wrap the dough in cling wrap and chill for 1 hour OR scoop 18 dough balls and then chill.
- *You may mix the peppermint sugar and cut a tbsp into the dough halfway through the chilling process if you'd like.
- Bake the cookie balls for 10-15 minutes or just until they begin to brown slightly. Remove from oven to cool.
- When cooled just enough to handle, roll in powdered sweetener, then again to add a second layer.
- Sprinkle with red sugar and serve!
Notes
I HIGHLY reccomend rolling in powdered sugar TWICE.
Once when they are warm to sort of melt the sugar and encase the cookie in a crunchy sweet coating and then AGAIN once they begin to cool to give them the traditional powdered look.
