Let’s not beat around the bush here. We have all dreamed of putting candy inside of a pop tart. It’s a breakfast pastry that is practically dessert anyway, so why not take it to the max?

To make matters better, our little slice of breakfast heaven is void of gluten, all sugar has been swerved, and the chocolate is stevia-sweetened and SPECTACULAR.
Oh, and there’s like a hundred tbsp of butter soooo…let’s get it.

The reason the following un-baked pop tarts look, well, a weird color, is because I attempted to add some peanut butter to do the dough. It failed.
SO instead of taking all new raw photos, I stuck with this. You can see the finished product with the real dough recipe that is sweet and buttery and not gross.
Pop Tarts and Keto Sweeteners
Even though these tricky little pastries look absolutely pornographic, they’re not overly sweet AT ALL. That’s because I didn’t want these to taste disgustingly sweet! Just enough to make you feel like you are being naughty before noon without wrecking your guts.
The best sweetener for firm keto baked goods is Erythritol which is also referred to as Swerve, a brand of keto sweeteners made of erythritol! Erythritol behaves differently than other keto sweeteners such as Allulose in baked goods. You’ll get a sturdier, better-formed cookie or brownie with Swerve for reasons that only scientists know. Just trust me when I say it works best.
Because these tarts are loaded with goodness, they are also on the heavier side when it comes to calories and carbs.
Just know that these are not a daily tart, but more a weekly treat-tart. You could also make them a little smaller to eek out an extra portion which is totally fine, too!

Peanut Butter Cup Pop Tarts! {Gluten Free & Keto!}
These gluten-free, low-carb pop tarts are a fun treat when you want to indulge in peanut buttery goodness!
Ingredients
PopTart Dough
- 1 cup Almond Flour
- 1 tbsp Coconut Flour, see notes!*
- 1 tsp Xanthan Gum
- 4-5 tbsp Swerve, or sweetener of choice
- 5 tbsp Butter
- 1 Egg, beaten, 1 tbsp reserve for egg wash
- Pinch Salt
PB Filling
- 4 tbsp Natural Peanut Butter
- 1 tbsp Butter, melted
- 2 tbsp Swerve, confectioner's style
- 1/4 tsp Vanilla Extract
- 3 Lily's Peanut Butter Cups, chopped
Top It!
- 3 oz Lily's Milk Chocolate, melted
- More Lily's Peanut Butter Cups, chopped
Instructions
- Whisk the almond flour, coconut flour, xanthan gum, and 4 to 5 tbsp sweetener, depending on how sweet you want it. Cut in the butter until the mixture looks sandy.
- Beat the egg and reserve 1 tbsp for the egg wash. Add the beaten egg to the mixture and use a spatula (or your hands) to kneed until a soft dough forms. It will feel wet and sticky!
- Wrap the dough in clear plastic wrap and continue to kneed to distribute the moisture. Chill dough for at least 15 minutes and preheat the oven to 350!
- Make the Filling: mix the peanut butter, melted butter, sweetener, and vanilla until smooth. Set aside.
- Divide the dough into two equal portions. Roll one chilled dough ball into a thin rectangle (about 1/8th inch).
- Cut into 4 smaller rectangles and trim away any uneven edges. Place the pieces on the baking sheet and smooth any misshapen pieces together. They don't have to be perfect!!!
- Repeat with the second dough ball to make your "top" pieces. *You will have scrap dough leftover and that's ok.
- Spread the dough with the peanut butter filling and a few pieces of peanut butter cups. Top with remaining dough and crimp with a fork.
- Brush with the egg wash, sprinkle with a pinch of granulated Swerve, and bake for 15 minutes or until golden.
- Cool before topping with melted chocolate and more peanut butter cups.
*You can make 4 large tarts like I did, or you can make 5 smaller tarts by rolling them a little thinner and making the tarts smaller!
Notes
If your dough is TOO wet or being difficult, you can add another tablespoon of coconut flour and make sure to work with it chilled.
Sometimes I can squeeze out 5 pastries, depending on the size I form each tart and how thin I roll the dough. THE BEST pop tarts are on the smaller/thinner side because the dough bakes a little more evenly!!
