Desperately Seeking Snacks
How often do you find yourself jonesing for a sweet & salty treat, but you go to your pantry and you have nothing? Nadda. Zilch in the delicious snacks department.
For me, it’s all the time because I try not to buy that stuff. Not one ounce of self-control here. OR when I do buy it, I eat the entire package in the car after I’ve barely left the parking lot.
Hard Truths.
SO you are at home, living in dirty sweatpants and unwashed hair, mid-Netflix binge, and looking for the most delicious, sweet & salty, crunchy, buttery low carb treat you can find. You have nothing that sounds appetizing and you’re clearly not in any shape to venture out into humanity. You must forage for ingredients.

Salt is another ingredient, but I think salt just magically exists in everyone’s home and never runs out, so it’s implied.

SO this is kind of a messy snack, but hear me out, it’s worth the hassle.
Just understand that they are gooey and delicate and you may
lose some nuts along the way, but I promise you they
mostly stay intact.

Don’t fill your wells QUITE that full.
About half full is what I have found to be perfect. Three-quarters full maybe.
There is also a level of sweet that I couldn’t decide on. Ugh, decisions.
IF you love really sweet, buttery caramel goodness,
follow the recipe as is.
IF and only IF you want a lighter, more crumbly snack—
Reduce the Butter and Sweetener both to TWO instead of THREE,
which is the recipe you see featured here.
The recipe in the description is deliciously more caramel-heavy.
For a MORE caramel like cluster, follow the directions as is.
For a LIGHTER caramel texture, change the Truvia and Butter to 2 tbsp and 2 tbsp!
Magic Coconut Hemp & Pumpkin Seed Clusters! {GF & Low Carb}
Magically sweet, salty, crunchy, caramelly and KETO!
Ingredients
Dry Goodies
- 1/2 cup Coconut Flakes
- 1/4 cup Slivered Almonds
- 1/4 cup Pumpkin Seeds
- 1/8 cup Hemp Seeds
Sauce
- 3 tbsp Butter
- 3 tbsp Truvia (or granulated sweetener of choice)
- OR see notes above for lighter clusters
- 1/2 tsp Vanilla Extract
- Pinch Salt
Instructions
- Measure all of the dry ingredients and have them ready while you prepare the caramel mixture.
- Heat the butter and sweetener in a small saucepan over medium heat.
- Cook the mixture for 5-7 minutes, passively stirring, and when it begins to bubble, add the salt and vanilla.
- Once the mixture begins to brown, remove from heat and stir in the dry ingredients.
- Portion the candy into a mini muffin tin sprayed with cooking spray or into mini cupcake liners. Only fill the tins HALF way to make 10 portions. *8 if you use the lighter recipe)
- Turn your oven to the broiler setting and let it heat up for about 5 minutes.
- Place the tray under the broiler to toast the coconut, about 3-5 minutes. WATCH because those babies will burn in the blink of an eye!
- Remove from the oven and use a spoon to press the clusters into the wells, flattening each one.
- Pop the whole tray of candy in the freezer to chill and set.
- Once solid they can be popped out with a sharp knife and stored in the refrigerator!

*NUTRITION FACTS were calculated using Truvia Baking Blend which also contains 2 grams cane sugar. The Net Carb count is 3.8 total!
If you use Swerve or Erythritol, the net carbs would be 1.8!!

Oh no! I’m so sorry to hear this. I will add that as a note!! I wonder if my broiler is old and doesn’t get quite as hot. I’m going to retest this with a different oven and thanks again for bringing it to my attention!!!

Hey Amanda! So which type of sweetener did you use? I find that it makes a difference.

These are AMAZING, glad I made a double batch! I’m adding them to the rotation.
I used Lakanto monkfruit sweetener bc I didn’t have Truvia, and made them in a regular sized muffin tray bc I don’t have a mini one. It filled all 12, but they might have been overfilled as they we’re really hard to get out! I might try lining the pan with parchment paper next so I don’t end up flinging coconut all over my kitchen 😄
