Are you Nuts? And Berries?
Absolutely! Especially if the nuts are pistachios.
I feel like pistachios don’t get enough attention in the recipe world. Sure, every one of us has shelled our way through a 1 lb bag while watching trash tv, but how often do you shell them for cooking?
I’m gonna guess never.
SO I feel it is my duty as a foodie and lover of the pistash to create a recipe or two that is worthy of their superior flavor and pretty green skin.
Plus, these nuts are packing some major health benefits.
Powerful Pistachios
Here we go with health facts!
As if the pretty green smoothie pic wasn’t motivation enough, pistachios have a boatload of vitamins and minerals that can help you stave off bad health juju like high blood pressure, and can probably even help you live longer! Neat, huh?
- Sterols: A diet rich in plant sterols can help lower blood cholesterol. (1)
- Carotenoids: Beta Carotene is a precursor for Vitamin A and what gives pistachios their signature green color. Carotenoids can be powerful antioxidants which may contribute to reduced cancer risk. (2)
- High in Fiber, Potassium, and B Vitamins! All good things for your bod.
Layering It On Thick
The unique flavor and healthy junk is great, but the absolute beauty of this multi-colored smoothie is what sells me every time.
For starters, you have your super green layer with spinach (also healthy) pistachios, greek yogurt, and nut milk. THEN you top it with a fruity pink layer that is frozen raspberries PLUS all of that other stuff!
Now, you can absolutely just throw all of the ingredients in a blender. No need to pimp your smoothie every day. But if you do want to layer it up, an immersion blender works well because you can easily switch between blending colors without a lot of mess.
A note on immersion blenders: Be VERY CAREFUL to make sure your mixture covers the whole blending base before you turn it on or it will explode green smoothie all over your kitchen…

Like my Green Goddess Smoothie, this one has hidden protein in the form of teeny hemp seeds but instead of nut butter, this time we have some freakin gorgeous pistachios.
Pistachios are the only nuts that are green with a violet-purple hue.
Must be all of the magical vitamin power showing through…
When I’m not making a layered smoothie, I STILL use my immersion blender.
It will blend up my protein powder, nut milk, and ice mix like nothing and clean up is way easier than a traditional blender.
Don’t forget to top your two-toned smoothie with more goodies before you mix everything up and slurp your heart out.

Raspberry Pistachio Power Smoothie {Low Carb!}
Sweet and salty is the perfect combo in this Raspberry Pistachio Low Carb Smoothie!
Ingredients
- 1/3 cup Greek Yogurt
- 1 cup Milk of Choice (I used Cashew Milk)
- 1/4 cup Baby Spinach Greens
- 2 tsp Hulled Hemp Seeds
- 1/4 cup Frozen Raspberries
- 1 oz Pistachios, shelled
- 2 tbsp Sweetener of Choice (stevia or erythritol)
- Ice, if desired
Instructions
To Layer
- Blend Greek yogurt, milk, hemp seeds, and sweetener until smooth. Pour half of the mixture into a glass to be reserved for the raspberry layer.
- Add spinach, pistachios, and ice to the blender and blend until smooth. Pour into your smoothie glass.
- Gently rinse your blender cup and add the reserved smoothie base.
- Add frozen raspberries and blend until smooth. Pour onto the green layer of your smoothie.
- Top with more crushed pistachios and berries and enjoy!
