We have a serious crisis on our hands
And like all important matters, it’s cookie related.
Are you aware that there are very few recipes for keto-friendly chocolate chip cookie cup that are filled with ganache right now?
I know, because I checked.
So that means every day billions of people are going without keto-friendly chocolate chip cookie cups filled with ganache and it honestly makes me sick.
BUT since I’m all about change, I cleared my (very busy) schedule to create a cookie worth cupping. And a ganache worth doing, uh, whatever ganache does.
Swirling? Twirling?
Trick question! It’s all of the above.
A “Not So Tough” Cookie
This isn’t like any of my other keto chocolate chip cookie recipes. This cookie had to be tweaked slightly so that we could make it act like a cup for the ganache.
Bonusβit’s a pretty easy recipe that (once cupped-up) could be filled with a bunch of different fillings.

Cuppin’ Up Your Cookie 101
It’s important to really press your dough into MINI muffin tins.
That’s the best size to ensure it will be cooked through without getting
all burned on the outside.
Releasing Your Cookie 101
Don’t try to bang it out of the pan PLEASE. That is a recipe for disaster cookies.
1 Use a super sharp knife to loosen the cookies from the edge of the pan.
2 Press down and twist the cookie cup until it spins.
3 Pop it out.
4 Ganache it.
For my next cookie cup, I think I’ll make a buttery sugar cookie.
But what should we fill it with?
Another trick question!
We fill it with berries and whipped cream, obviously.

That’s how dedicated I am to this cause.

I always always always use a mini muffin tin for my cookie cups.
It’s the perfect serving size.

Keto Chocolate Chip Cookie Cups with Ganache
Keto friendly chocolate chip cookie cups filled with dark chocolate ganache and love.
Ingredients
Cookie Cup
- 1 Egg Yolk
- 1/4 cup Swerve Brown Sugar
- 1/2 tsp Vanilla Extract
- 2 tbsp Butter, melted and cooled
- 1/4 tsp Xanthan Gum
- 3/4 cup Almond Flour
- 1/4 tsp Baking Powder
- 1/2 tsp Salt
- 1/4 cup Lily's Semi Sweet Chocolate Chips
For the Ganache
- 6 oz Lily's Semi Sweet Baking ChipsΒ
- 1/2 cup Heavy Cream (1/3 cup for very stiff ganache)
Instructions
- Beat the egg yolk, brown sugar, and vanilla extract until smooth. Add the Xanthan Gum and cooled butter and whisk until it's dissolved. The mixture will become thick once the xanthan gum has dissolved in the fats.
- Mix in the almond flour, baking powder, and salt and work until a sticky dough forms. Fold in the chocolate chips.
- Heat oven to 325°F. Portion the cookie dough into the mini muffin pan and press into the edges to form a cup. Each well should hold about 1 tbsp of dough.
- Bake cups for 9-11 minutes or until they are golden brown. Let cool completely, then loosen the edges of the cookie from the pan with a sharp knife. Press gently on the cookie and twist to release.
Make the Ganache
- Heat heavy cream in the microwave or in a saucepan over medium heat just until it gently boils, then pour over the chocolate chips.
- Let the cream melt the chocolate for about 2 minutes, then stir to combine.
- Once the ganache is cool enough to work with, fill a pastry bag or plastic bag with the ganache and pipe into the cookie cups!
Notes
Net Carbs per cookie cup = 9 grams
*That may seem like a high number, but the carbs are mainly coming from the dark chocolate and can be reduced (if needed) by using less ganache!
