Keto Cookies for Breakfast?
You bet your biscotti!
Anyone who has ever spent any morning time with me knows I enjoy a little sweetness at sunrise. Pancakes, waffles, cupcakes, brownies, ice cream, etcโall delicious breakfast options, but I draw the line at traditional biscotti.
Too crunchy, right? Please tell me I’m not the only one!!!
I need a (breakfast) cookie that pairs well with coffee but isn’t required to pair with coffee. A cookie that doesn’t demand to be dunked in coffee or risk chipping a tooth. If I want to break a tooth I’ll just eat peanut brittle.
*Bites down, incisors first on perfect biscotti*
Now, after all of these years eating bunk biscotti, I can finally say I have the perfect breakfast cookie and/or Christmas Brunch contribution and it feels really good.
Peppermint Stick Biscotti with Chocolate Chunks โ {Low Carb, Gluten Free}
One huge factor in gluten-free biscotti bakin’ is making two loaves. IDGAF if you put the same candy mixture in both or not. Same or different, two loaves. TWO! It’s just better this way.
Slice them into ONE-inch cookies, unlike this photo which I later went back and cut them down a touch more.
Round two of baking the biscotti, post-cutting, to allow the center to dry out a little. Sort of sturdy is the key. Not dried up, crumbly mess.
Cool it. Dip it. Sprinkle it with tons of candy pieces! And don’t forget to package these in a way that will not travel well, but will look so Martha.
Serve with an oversized portion of cocoa that spilleth over, making a giant mess for yourself to clean up later but it’s okay because you can Instagram it.

Peppermint Stick Biscotti with Chocolate Chunks {Gluten Free, Low Carb}
Crunchy outside and tender inside, just like biscotti should have been created!
Ingredients
- 2 cups Almond Flour
- 1/3 cup Swerve Brown Sugar, or up to a 1/2 cup for sweeter biscotti!ย
- 2 Eggs, whole
- 1 Egg white
- 1/4 cup Butter, softened
- 1 tsp Baking Powder
- 1/2 cup Dark Chocolate Chips (double for both loaves)
- 1/4 cup Peppermint Candy Sprinkles, or sub crushed sugar-free peppermint candies*
Instructions
- Heat oven to 375° and line a baking sheet with parchment or a silicone mat.
- Use a hand mixer to cream butter and sugar until well combined.
- Add eggs and egg white, one at a time, mixing until smooth.
- Stir in flour and baking powder until dough forms.
- Fold in optional candy pieces or chocolate chips and divide into two equal loaves and place them on a baking sheet.
- Bake for 20-25 minutes or until golden.
- Let cool, slice into one-inch sections and return to oven for 10 minutes.
- Cool before decorating. Store wrapped in parchment or in a lightly covered container.
Notes
*These nutrition facts were calculated using Lily's Dark Chocolate and omitting the Peppermint Candy. To use peppermint candy as a keto recipe, simply crush sugar-free peppermints (or 1 candy cane) and use it to your discretion. OR you can add red natural food coloring and peppermint extract to Swerve granulated sweetener. Then just use it as a "sprinkling" for the outside of the biscotti!
Dipping Chocolate is also not included in the calculation because it can differ so much! Just remember to include it in your final calculation (if you choose to use it!!).

Hey! I just added it to the recipe and it’s 1g NET carbs if you omit the peppermint candy.
It’s 2-3g NET carbs if you want to use some of the real Wilton Peppermint Crunch Sprinkles, or you can substitute a sugar-free candy cane if that fits your diet! ๐

These look super yum! I would totes make them… If I had not already had a couple perfectly poured portions of peppermint almonds today. Perhaps for breakfast…..:)
