What really is a serving size?
Because I genuinely don’t trust packages anymore.
Did you know that the calories on nutrition labels can be off by 20% in either direction? Oh, and guess what direction is most common…

Yet another reason why counting calories doesn’t necessarily mean easy weight loss and counting micronutrients (super cool things also known as vitamins) is increasingly more appealing. I mean, can you imagine that? Logging your daily intake and saying, “ah man, I’m low on Vitamin C. Pass the blueberries”? Because that is a world I could happily live in. #someday
Keto Cookie For Two:
Give Or Take
This chocolate chip cookie may not be the EXACT serving for two or one or however many. That’s not important. What is important is that it’s not an entire batch of cookies, which is definitely not one serving, that much I know.
When you’re in the mood for a sweet treat, it’s just enough of chocolatey, crumbly, buttery goodness to satiate your intense chocolate chip cookie cravings (keto or nah) without having the temptation of dozen cookies staring you in the face.
Oven or Microwave?
Please don’t microwave this cookie. It is not a microwave-kinda-cookie, just a small-batch cookie. Sort of like a keto chocolate chip skillet cookie, only in a non-stick pan.
The basic recipe is just like my shortbread recipe, only scaled down. Without an egg as a binder, you need the slow heat of an oven to make it all come together. Mkay? Mkay!

Bakeware 101: 6 in round pan or ramekin?
Either will work, but a ramekin is a bit smaller than the pan shown above.
Be aware of your pan size because it affects the thiccc-ness of your cookie.
Could you make this as a keto chocolate chip skillet cookie?
Maybe, but it may stick. I also feel it would definitely need an egg white to make it a little bit softer.
I beg of you, don’t skip the salt sprinkle.
It brings out flavors I didn’t know existed in a cookie.

Keto Chocolate Chip Cookie for Two
A double-serving of buttery keto chocolate chip cookies for all of your sweet teeth!
Ingredients
- 1/4 cup + 2 tbsp Almond Flour
- 1 tbsp Coconut Flour
- 1/4 tsp Baking Soda
- 2 tbsp Sweetener (like swerve or other erythritol blends)
- 1/4 tsp Xanthan Gum
- 3 tbsp Butter**
- 1/2 tsp Vanilla
- 4 Pecans, chopped
- 1/4 cup Stevia Sweetened Chocolate Chips
Instructions
- Heat oven to 350 and coat a small baking dish with non-stick spray.
- Mix together the dry ingredients until combined.
- Cut in the butter and vanilla, working the mix until a dough forms. The warmth from your hands helps so dig in!
- Fold in the pecans and chocolate chips, press into pan and bake for 10 minutes or until golden.
- Sprinkle with a pinch of flaky salt and let cool before removing or just eat it straight from the pan.
Notes
**Butter cannot be replaced 1:1 with coconut oil in this recipe. If you want to sub coconut oil, you must reduce the almond flour to 1/4 cup and increase the coconut flour to 2 tbsp coconut flour!

I made this twice. The first time I put it in a 4in cake tin. It was thick and I had to cook it for at least 20 minutes. It was good but too thick. I just made it again. I added Lilly’s chocolate bits and Lilly’s Peppermint bit and the pecans. I also added a tablespoon of psyllium husk. I put in on a cookie sheet and make it fairly flat. I cooked it for 20 minutes until nice and golden. I pit it in the fridge to cool down because I just wanted to eat that thing as soon as possible!!! It was incredible!! It takes a little longer to make because you have to kneed the butter and flour until it makes a dough, but it’s well worth it. This is my new go to cookie recipe!!!

What is the size of the pan you used?

My pan was a six inch mini baking pan! You could also most likely divide the cookie mix between a few wells of a muffin pan too. Just make sure you let it cool completely before removing, since it takes time for the sugars to re-solidify. Happy Baking!

Made this today and it was absolutely delicious! I used 2 1/2 tsp of Truvia for the sweetener, because that’s all I had, and I left out the nuts. My carb-loving family even thought this was excellent! Thanks for a great small-batch recipe that is easy to whip up and enjoy! I’m sure I’ll be making this often to curb my chocolate and sweet-cravings!
