Soup Season ๐
I can’t think of a better time of year! Cool (not cold) temperatures that allow you to wear pants and drink hot coffee without sweating yourself into a dehydrated stateโwhat a concept!
To kick off soup weather, I decided to start with a classicโLight & Brothy Herb Soup. Guys, it’s so good.
Okay, so it looks like pureed spinach, and it partly is, but then it is so much more.
All The Greens
This humble bowl of brothy, olive oil(y) goodness is brimming with good stuff. In addition to herbs and greens, it has greek yogurt, avocado, and salty roasted chickpeas! *IF you are keto I HIGHLY recommend topping it with toasted pistachios in place of the chickpeas because it’s amazingly delicious.
1. Spinach – Immune boosting, full of antioxidants, and so much more

Remember seven seconds ago when I mentioned the Salty Roasted Chickpeas?
This is them ๐ and they are SO addictive.

You may be thinking, “Hey Liz, this looks great but it’s sort of oily”
and to that I say, I know.
I had a little scuffle with the bottle of EVOO and well,
you can guess what happened.
Too much drizzling…so just be (more) careful (than me).
Brothy, green, salty but sort of tangy, and reheats & eats soooooo well.
Green Goddess Herb Soup { Low Carb with Dairy Free Option}
Super green and exploding with the vitamins, minerals, and FLAVOR! Keto, gluten free, and dairy free option too!
Ingredients
Soup Base
- 2 tbsp Olive Oil
- 3 Shallots, diced
- 4 cups Vegetable Stock
- 2 cups Broccoli Florets
- 2 cups Baby Spinach
- 1 cup Parsley Leaves, stems removed
- 1/2 cup Basil Leaves
- 1 Whole Avocado, diced
- Salt & Pepper to taste
Roasted Chickpeas
- 1 can Chickpeas, drained and patted dry
- 1 tbsp Olive Oil
- Generous Flake Salt and Pepper
For Serving
- 1 cup Greek Yogurt
- or 1 cup Coconut Cream + 1 tbsp Lemon Juice for Dairy Free
Instructions
- In a medium soup pot, saute diced shallots in 2 tbsp olive oil over low heat until softened.
- Add chopped broccoli and stock to the pot and bring to a simmer. Cook until broccoli is tender.
- Add Spinach, Parsley, and Basil to the soup and stir gently to wilt the spinach.
- Transfer soup to a blender and add the diced avocado. Puree until smooth. *You may have to work in two batches.
- Return to the pot and stir in greek yogurt. Season with salt and pepper and serve.
To Serve
- The Greek Yogurt or Coconut Cream with Lemon Juice should be added AFTER the soup is blended
- OR
- If you plan to freeze the soup or intend to have leftovers, omit greek yogurt and add just before serving. One good scoop per bowl is perfect!
Roasted Chickpeas
- Heat oven to 400 degrees.
- Arranged the chickpeas on a baking sheet and drizzle with oil, salt and pepper.
- Bake for 10-15 minutes or until the chickpeas split open.

This looks amazing and I canโt wait to try it. I am not a fan of chickpeas. Anything you would substitute to give that little crunch?

If you don’t love chickpeas you could toast some pine nuts, add pepitas (pumpkin seeds which are deliciously crunchy), or even homemade croutons! I buy keto bread at my local Aldi which would crisp up perfectly for croutons. If you are strictly gluten free, you can use a keto bread recipe and turn that into croutons too! Hope this helps!

I’ve been changing my diet by eating nutrient-dense and colorful food. Saw this recipe and wasn’t sure I’d like it – but bookmarked it just in case. But I made it today and was pleasantly surprised! Made it just as directed. LOVED the cripsy chickpeas too.

The avocado is to add a little fat and a smooth consistency but you can certainly leave it out if you are allergic!

I made this soup tonight and it turned out fantastic. I followed the recipe word for word ……. well I was confused about the broccoli because 2 cups of florets and 2 cups of chopped florets are very different. I used two cups of whole florets and chopped them to cook. Oh and also, I used chicken bone broth instead of veggie broth. So, yeah, I suppose I didnโt follow word for word.
Anyway, it was fantastic!!! Iโm adding this recipe to my handwritten collection of food greatness as Iโm typing this.

Not a very good soup. I wish people would not comment unless they actually attempt the recipe. Well, here you go. It tastes like pureed broccoli, mostly. Couldn’t eat much more than a literal cup (8 oz).

Sorry you werenโt into it Stacey! It really does taste like a broccoli but I wonder if youโd like it better with a little less broccoli and more herbs? It can also be done without pureeing it if that helps too! Thanks for trying and thanks for the honest review ๐

I want to make this but Iโm allergic to avocado! Should I just leave it out of the recipe or do you have a substitution recommendation?

I think you can safely leave out the avocado! It does add a bit of fat and some creaminess so you could try adding a tbsp or two of coconut oil or even some heavy cream if you’d like!

Cauliflower would absolutely work! I have actually made this with just herbs and a ton of spinach and itโs still good! I did add some Parmesan cheese for good measure though ๐

Totally! If you wanted to add chicken, my advice would be to precook the chicken and add it right at the end. If you are into easy (like me) I would grab a rotisserie chicken from the grocery store and just shred it. BOOM. Done. ๐

Thanks for including a dairy free option! I’m enjoying all the greenery of the soup! I, too, have issues with “drizzling” EVOO – it tends to gush out of the bottle. I like the note about freezing into batches – a good meal planning tip!
